How to prepare your hibiscus drink?
Bissap (or Gwozey peyi in Creole) may be consumed either hot or cold (we prefer it cold in summer for its very thirst-quenching effect).
As you can see, the recipe is really simple to prepare.
In all instances, 1.5L of water, 100g of dried hibiscus flowers, and 50g of sugar are used to make the recipes.
– For a hot infusion:
Bring 2 tablespoons dried flowers per cup of water to a boil.
Allow to infuse for 4 to 10 minutes, depending on the intensity required.
The water then becomes bright crimson and has a somewhat acidic flavour.
– For a cold infusion:
Pour water and hibiscus blossoms into a carafe.
Stir everything together and place in the fridge overnight.
It takes at least 8 to 12 hours for cold water to absorb the flavour of an ingredient.
If desired, add cinnamon, lime, or mint leaves to the mixture.
All that remains is to strain the infusion and serve with ice cubes.
